If I had to pick one from the PS3 lineup it would have to be God Of War, but thats about it....

Secretly envy until you actually play it. I was dumbfounded after buying a PS3 for it :( Take out cutscenes and installs, and if you know what you're doing, there's not more than 5-6 hours of gameplay tops.
Off the list either LBP or Killzone 2. I think Live could do a lot with LBP. But I get to play them anyway, so it doesn't matter to me.
i actually liked that racing game they had.. motorstorm. i'd probably buy it if 360 had it. (only ever tried it at the stores display though, so don't know how boring it gets)
warhawk looked kinda cool too, but i never played it.
Now that is an example of one game I don't think could ever be ported over to the 360. Gran Turismo is the premiere racing series, and it really raises the bar for realistic automobiles and tracks each console generation. I believe this is a game which will push the power of the PS3 more than any other game currently in development for the system.
