Yea, it's got a pretty steep learning curve. You should probably invest some time playing single player til you get a little more used to it. A week or two will work wonders.
You'll probably get used to it and find that the control stick works quite well for aiming once you ge the hang of it. Welcome back to console gaming!
If you're looking for recommendations on 360 FPSs or third-person shooters, which also use the right control stick to aim, my favorites include:
Mass Effect and Mass Effect 2 (3rd person shooters/RPGs)
Dead Space and Dead Space 2
Call of Duty games
Halo 3, Halo 3 ODST, and Halo: Reach
Another suggestion-- you might want to try playing the games on Easy until you get accustomed to a control stick, although I don't know how long that will take.
There is third party hardware out there that lets you use a keyboard and mouse in Xbox 360 games. I personally own a XIM 3 and love it, it pretty much made console FPS games about a million times better for me.

I've had the same graphics card for two years and it still runs everything I play at max settings (minus DX11). As for the controller issue, I think it's just whatever you're used to. I've used a controller all my life and i prefer it over anything else. I bought my first gaming PC two years ago. I hate using the KB&M for anything other than RPG's. I don't play RTS games.
My experience was similar. I was a PC gamer, also got tired of upgrading all the time, and switched back to consoles this generation. Now I find it really hard to go back to WASD and the mouse. I know it's a little more accurate with the mouse, but man using a game pad is so much more easier on the hands for long periods of gaming.

Don't forget about the modded controllers which the COD community is notorious for. I playwith a plain old controllerand I swear people have some weird advantage sometimes and I attribute that to Modded controllers. Remember that when you're getting owned relentlessly.
