Well Halo 3 was my favorite for the custom games. People came up with some really creative maps in forge. Some of my best years in gaming right there.
Non-shooters, you could try Forza Horizon 2 and maybe Minecraft if you have a friend. GTAIV was pretty fun online, so I'd imagine V is better. I haven't played it though.
You Should Try the NBA2k15, Formula one 13(it is free now), the free game happy wars, battleblock theater, the FIFA and MADDEN franchise or castle crashers.

formula 1 13 has been damaged with the games with gold... its full of forza players now... career is much better trust me. happy wars ahs a lot of players and free to download, so yeah, why not?
GTA V is amazing online there are so many different things you can do: Deathmatch Last Team Standing Land, air and sea races Parachuting Capture Survival Play golf, darts and tennis There are also heists now which are great fun (if a tad frustrating when your crew members keep on dying needlessly) Vehicle deathmatch
There are more but seriously I have never played a multiplayer game with so many different modes, and not all of them involve shooting! Very active online community at present.
I don't tend to play multiplayer games that aren't shooters, FIFA or racers so I don't know what else to suggest.
NHL games online are pretty fun if you're into sports. My favorite part of NHL is the Online Be A Pro game mode, I used to play it with my friends all the time, its a sick game mode.
If you're into sports games, I would check this out for sure.
