I'm in the same boat as you except that my wife isn't big on 1st person shooters. We had a great time with Marvel Ultimate Alliance and Lego Star Wars Complete Saga. I recommend both of those highly. She didn't like Halo (split-screen) or Gears of War (but I'm still working on her).
Here are a few we've played (We actually played some of these on PS2, but they are probably the same or better on XBOX). The XBOX designation means original XBOX, the 360 means the new one. The older games should work on the 360.
X-Men Legends (XBOX)1 player for the first mission or so, then the second player can come in
X-Men: Rise of Apocalypse (XBOX) 2-player
Marvel Ultimate Alliance: (360) 2-player, very very fun. Highly recommended. very long game.
Lego Star Wars: Complete Saga (360) super fun. slight graphical hang-ups here and there, but very enjoyable.
Baldurs Gate: Dark Alliance: (XBOX) 2 player hack-n-slash, not much thought involved, but very fun.
Baldur's Gate 2: (XBOX) sequel
An upcoming title is Lego Indiana Jones. That should be good too. It is supposed to release on June 3.
There needs to be more hack-n-slash games for real-life co-op.
