I don't think you can. Really why would you want to (other than to save cash). The whole point of GH and RB is to play with different instrument-like controller.
No, when a controller is plugged in it gets recognized for vocals...I`ve never tried with multiplayer though because I don`t see how using a controller would be fun

I could see why. my friend broke his right thumb. its healed now, but its hard for him to strum, but we would play GH and he was good with the controller, as his thumb was not needed. We play rock band and he fails out the band all the time, he sucks at drumbs even on easy and can't use the guitar, and no one wants to hear him sing. I don't see why they don't have the option as it's in GH.
