Did anyone beat the boss at the end of RE 7 Not a Hero mode on the hardest difficulty.... that thing was a machine. Used almost all the ammo available and I was on my last few rounds when I finally killed him.
I dont hate him per se.... but I respect his hustle. Took me many tries.
Even the End of Zoe boxing match final boss was quite a challenge in that game.

The end-game boss in Horizon Zero Dawn is too damn difficult. Vega and Bison in the original Street Fighter 2 game are overpowered as f###. And I hate Kuze in Yakuza Zero, who keeps fighting you like 3 or 4 times cos he can't accept that he is weaker than you (Kiryu). What an idiot.
I am furious over enemy AI in general.
In all shooters and action games, I aim my gun or bow. I have it perfectly lined up for a headshot, fire, and somehow the AI dodges bullets/arrows with super human reflexes.
Every single game does this now. It’s just not possible to dodge like this in real life.
I understand they want to make games more difficult, but I would rather have realism lol.

Haha. Gotta stock up on Lloyd's Talismans. Puts them to sleep and you can grab the item without fighting them.

Currently those electric porcupine things in Anthem.
They look like docile creatures and yet every time you fly by them they shoot you out of the sky. Fucks sake they can even shoot electricity at you.

There is plenty for me but when it comes to current gen games with the most hated enemy for me, it would be the Winter Lantern from Bloodborne. I really hate them for causing so much Frenzy status to you and also their annoying grab attack.
I came here to post this. There's plenty of deadly creatures in Bloodborne, but these ones are just downright terrifying when you cross paths with them.
Deathclaws in the Fallout series. Whether it's Obsidian (New Vegas) or Todd Howard's side of Bethesda (3, 4, Shelter). I always hate fighting these things without the right perks. New Vegas especially because there's a quest I do SHOULD I please both the NCR (for their ending as I prefer them) and Red Lucy (who brings The Courier to her bed if you do her quest, which I do for RP's sake).

These fuckers got me the first couple times. They put them far enough apart that you would forget about them after their first encounter. After that, you just naturally start attacking every chest you see in a Souls game. Lol
You like punishment? Meet Blitz. Blitz is a fairly straightforward enemy on Devil Hunter (Normal) or Human (Easy) difficulty. But start unlocking the higher difficulties and they become hell incarnate. You think they are hard on Normal? Probably don't bother trying Son of Sparda (Hard). They get a Devil Trigger. Yep, they get more powerful and faster if you give them time to hit their trigger, and become essentially mini-bosses.
For me, anything that poisons me or one-hit kills me. I also despise bosses that prolong fights by summoning lackeys.
Bon Wheels in Dark Souls are probably the worst enemy design ever in the franchise. They are annoying and lethal. No matter how much health, armor or experience you have, one mistake against this dudes and you are dead. Also, is not like they are fun to fight against them, you get tense for all the wrong reasons. They are arguably the worst mistake in the game (not counting Bed of Chaos since that is more of a boss than a regular enemy).
