Like the topic title says, who will be better fit to take over old franchises? We had some developers that have taken old franchises and recreate them with success for example, Retro Studios taking Metroid Prime from Nintendo's R&D 1 (the Late Gumpei Yokoi's division), Igarashi's take on Castlevania with Dracula X (Turbo Graphics) and recreating the franchise with Symphony of the Night, and of course Itagaki reviving Ninja Gaiden (the original creator Hideo Yoshizawa left Tecmo and is employed at Namco Bandai). As well as Sega having to co-develop with Nintendo to make F-Zero GX.
Of course there are bad iterations of other developers trying to recreate franchises, such as Mercury Steam's take on 3D Castlevania, and Ninja's Theory take on Devil May Cry.
Personally, I wouldn't mind seeing the next Final Fantasy being developed by Eidos Montreal (makers of Deus Ex). I think they can give a spark for more western interest with the franchise. Also, would like to see Retro Studio's take on The Legend of Zelda franchise (hoping Aonuma retires after Zelda U is released). Also, I would like to see if Miyamoto can revive Sonic the Hedghog franchise, I would know he would do everything to return the games to their former glory.
