Been listening to this at work for hours.
Persona 5, hands down for me. I've been regularly listening to its OST since it came out, and I can't wait to hear the new music in P5: Royal.
Persona 5, and it's not even close. Those dudes are so talented it's ridiculous. Every track pulls up a wide range of emotions, and fits the game perfectly.
And Nothing has managed to match the epic sense of dread and chaos and feeling like you're in a games world the way Demon's orchestra did .
It's legit legendary status.

Nier Automata and YS8 for action, Persona 5 for traditional Jrpg.
Special Shoutout to FF15. The game is flawed but the music is phenomenal. I mean come on listen to this amazing track! Really suit the game and exploration. You really feels you want to go to an adventure with ur chocobo exploring stuff. Fantastic!
Also many great tracks like Hellfire, Omis Lacrima, Apocalypsis Noctis, sommus and its variation. Its awesome.

But you have some merit here. It's been many years since I've played Demon's Souls, and I have forgotten how much influence the game takes out of both Japanese and manga lore. It isn't really until Dark Souls came around where the worlds became more influenced by western archetypes.

Some idiots think they can type cast "JRPG" into a certain "type" that they want to believe but those generalizations have long been over-ruled by diverse and unorthodox minds of Japanese game creators.
Yeah Octopath Traveler is definitely an excellent soundtrack but I might prefer Xenoblade Chronicles 2 and Final Fantasy XV soundtracks over it. Dragon Quest XI May be another favourite of mine as well. Really hyped to play it this September.

JRPG is a subgenre of RPGs that share a common set of features, as defined by the earliest games in the subgenre (Dragon Quest, Final Fantasy, etc.). They can stray a bit (the story doesn't have to be linear, the combat can go realtime, etc.) as long as the core remains the same.
The Souls games have nothing in common with this sub-genre, and share none of the tropes, gameplay features, or stylistic features of JRPGs.
They're just action-RPGs made in Japan, in the same way that South Park: The Stick of Truth is a JRPG made in America.
The title of the subgenre has to denote something about the gameplay/narrative/style of rhe game, rather than just its country of origin. If every Japanese-made RPG was automatically a JRPG, then the subgenre would be completely useless as a way of categorising games.
