A red stat can also mean you have neglegted that stat...you can pray at an altar in any church to gain them back to where they were or if you have sined you will have to pray at all hidden alters scatered through out the map to gain it back.
It means that that stat has been damaged. You either need to pray at the church, cast a restore "statname" spell or drink a restore "statname" potion with enough points/value tor etore them to normal again.
