I have one PS3 that freezes up did a complete wipe and restore still freezes up

Probably nothing - the only really serviceable bit you could mess with (and I don't think it would help) is the HDD. Freezing, when not caused by software, typically means a problem with the chipset (e.g., bad sector of the RAM). What model is it? The well-known cause of freezing with early PS3 models is the YLOD (caused by solder separation of the chipset from the motherboard when warm). There are some "fixes" for that, but it's unlikely to last long (from personal experience attempting this)
