Once you finish all the main story missions, are you able to go back and complete the side quests, or will I need to complete all these before doing all the main missions? (Wanted, Outposts, Transmission Towers)

Yes. Once you've finished the main quest you can go and do the side quests and look for collectibles and stuff like that.

Mostly experience and money. Both are great help for the main quest; the more cash you have the better equipped you'll be and the more xp you get the more skills you'll have at your disposal so i'd recommend doing a few to keep yourself prepared.

Finishing a certain number of specific side quests, like the Bandit Assassinations or Hunting missions, and finding a certain number of the various collectibles occasionally unlock special Signature Weapons for purchase. These are ridiculously powerful (but expensive) guns that are a lot of fun to mess around with. There's a signature sniper rifle that's basically an anti-tank rifle, it'll kill anything.
