Does the PS2 upconvert PS1 games to 480p? I don't have my PS2 hooked up right now, and I don't want to take the effort only to find that Symphony of the Night doesn't display properly(I usually use my computer monitor, which doesn't support 480i).

No, the PS2 will still only output PS1 games at 480i, I have heard the PS3 does upconversion but I don't have one and can't really say how well it works.
I think your best bet for playing PS1 games on a computer monitor would be to use a video processor that will handle the conversion and scaling for you, I just found one in the garbage a few weeks ago and have been using it for this exact purpose. In all honesty though, unless you have a really nice processor/scaler (expensive) PS1 games will still look better on any old TV.
