If you want the best quality you don't buy a headset - you buy headphones, amplifier, digital audio converter, and a mic. If you want "the best money can buy" here's a good start...

You are correct that a virtual 7.1 is never going to be as good as genuine 7.1, but they have come a long way and some of them sound really good.
