So I have a GIGABYTE Radeon HD 6950 1GB GPU and I'm wondering ( since I think they stopped making this particular model ) what card I can crossfire it with? Or should I just upgrade to a new single one? Any help would be appreciated.

If you're going to Crossfire, you should get another 6950 1GB. It doesn't have to be a Gigabyte, it just needs to be a 6950. While you could Crossfire it with a 2GB model, the extra 1GB of VRAM would be completely wasted due to the way Crossfire manages GPU memory between paired cards.

While your PC is capable of Crossfire, a Phenom II will hold back a pair of 6950s. You really want to be running a newer platform with a faster CPU to handle a multi-gpu setup.

My personal recommendation is to hold off upgrading at all until the next generation of cards come out from AMD and Nvidia. A 6950 is still quite strong. If you're really feeling the urge to upgrade and have the money, a 7950 3GB or GTX 670 2GB would be a nice step up.

while hart sick is correct there are 5 cards u can crossfire with:

hd 6990 (equals to tri-fire 6950's)

hd 6970 (downclocks the 6970 to match the 6950)

hd 6950 2/1gb (cfx 6950's)

hd 6930 2gb (cfx hd 6930 thanks to it downclocking the 6950 however u need to import this badboy and buy it used)

Well, going a little off topic then, do you think anything on the rig is worth upgrading for now? Based on my specs below?

And even if not, where do you think I should start upgrading in the future? MB? CPU?

I thought crossfire didn't result in downclocks, remember that guy with the 5770 and 5750 that did better than 5750 Xfire and worse than 5770 Xfire?
