I have an HP Pavillion and my power supply is only 300w. I would like to upgrade my vid card (I have a PCI express x16 port) and was curious to run the high end cards how big of a power supply should I go? Also do you know are most power supplies standard in size, will they all fit in my tower?

All PSU should fit depends how big tower but HP towers run kinda small I think.

a quality 700w should be good for top end grafic cards and fairly future proof

and all power supplies i ever seen are the same size, like a standard

Your case should be able to fit a standard ATX size power supply in it. Most power supplies come in this form factor, so no worries! And for high to ultra-high end cards, I'd go with no less than 700W, like the guy before me said. Just make sure you have decent amp ratings across the +12V rails in the PSU.
