Medieval 2: Total War although there is no resource gathering. You build your nations, armies, there's diplomacy, and you can fight the battles.
While it's not exactly the medieval period, you should check out the City Building series.

If I remember correctly the games in the series cover ancient Rome, ancient Egypt, ancient Greece and ancient China.
The Stronghold series. Namely Stronghold: CrusaderMythPro1This. Stronghold 1 is also great, and Stronghold 2 is bearable with the latest patches.

Crusader is my favorite in the series, but I like the way there are hero-like units in Legends. It adds a bit of a twist to the series. Dragons ftw.
the Paradox Europa Universalis games fit your description, (heavy diplomatic and economic emphasis) but they are as unforgiving as buck and are definitely not 'chill'. They definitely strive for historical realism.
But you can give them a try.
I own Patrician III but haven't played it, but it has a great reputation as a trading/merchant sim (you run the Hanseatic league, if I'm not mistaken.)
