Newb; what are all these plugs for? :)

Hello :) I would like to know what all these ports are:
Blue = ??? (line-in, I believe, but such as what?)
Green = Speakers (at least I know that one :))
Pink = ???
Orange = ???
Gray = ???
White = ???
Yellow = ???

And also, I would like to rip music from a game, without having to unplug my speakers; how could I go about doing that?

Not 100% sure but probabbly those are all for speakers. Eg. Green for central speaker, blue for left(big speaker), pink for right(big speaker) etc.

Blue is Line In, Green is Front Left and Right out, Pink is Microphone. Orange, Black, and Grey are the commonly used colors for additional speakers in surround sound setups (surround side, surround rear, center & subwoofer). I don't think everyone quite conforms to the same color scheme for that yet. Your manual or software control panel should tell you exactly what yours are. The last two connectors (large yellow and the square) are digital audio outputs: Coaxial and Optical.
