i think the major benefit would be mods for single player i noticed alot of people who bought red dead redemption 2 are wondering were is single player post launch content this is where the benefits of mods come in
i'd buy it again on PC and play through it in first person mode with a mouse and keyboard.
that plus the obvious performance and visual benefits
I have a 1440p monitor and playing it at 60FPS with a mouse those two things alone will improve the game for me as on my Pro the 30FPS along with controller the movement and aiming was just bad and unresponsive for me.
Still a superb game regardless, but I would definitely double dip.

I can't list any more reasons than those.
All that has already been said.
1) better graphics
2) better performance and framerate
3) mods mods mods!
4) controls options
5) mods and more mods!

The only thing I can add is that I will actually play it as well.
The abysmal free aiming, which was the main reason I sold the game after only like four hours. I can't recall another modern controller game with aiming that terrible.
I really enjoyed playing it on the PS4 but with the PC version I would love some mods that would get rid off some of the more annoying aspects of the game. Also K+M all the way.

This time?!... I could help but start fist fights, hitting someone in the face and watching their cowboy hat fall off is one of the most satisfying things in the game. That and lassoing strangers while on horse back.

I haven't done anything like that! I couldn't bring myself to do that. But next time I will lasso strangers :)
So that modders could fix all the flaws that R* won’t.
-alter the wanted system so that stuff such as robbing a train is actually do-able without bridge tricks.
-make it so that the game remembers what weapons are selected so you don’t have to constantly re-select them.
....among many other small annoyances.
Eh TBH I had a lot of fun when exploring, playing late-1800's Cowboy simulator, running around and choking people, etc... but when it came to the actual gunplay I just wasn't feeling it. I really want to continue playing it and get past chapter 2, but I need some quality of life improvements.
