Shogun 2 has am epic soundtrack. Alot of the tracks are directly taken from the original Shogun as well, which alot of people have never played.

These are in no specific order. Just the order that they came to mind.
Civ 4. Baba Yetu is one of the best tracks in all of games. In general I prefer Civ 5's music, but that one beats it.
Gotta love Matt Uelmen's music from Diablo 2 and now Torchlight 1 & 2. One of the few game composers with his own distinctive sound.
Portal 2. A lot of good techno tracks.
Rome: Total War. I don't remember the composer's name, but he did an amazing job. The credits song is probably the best, but there are also a lot of good battle themes.
Knights of the Old Republic 1 & 2 - I put these evenly. They are different soundtracks by diffferent composers, but both equally good. KOTOR 1 had that classic Star Wars soundtrack, yet still many original tracks that could fit right into the movies. KOTOR 2 has a much darker soundtrack, which is really nice to see in the Star Wars universe. The universe has dark elements, but the movies and most games never really go in that direction. SWTOR has a few catchy ones, but no where close to the earlier games.
Baldur's Gate 1, 2 & Throne of Bhaal expansion - Of the three, I liked the first game's soundtrack the most. Almost everything will remain in your head after playing the game. Throne of Bhaal had a different composer, Inon Zur, but it was just as good as the first two with epic music to fit the epic levels.
Half-Life 1 & 2 - Very good atmospheric music. Most of it's not that interesting outside of the game, but the music really sets the feeling when playing the game.
Starcraft series - For both of these games, the Terran music is the best. As much as I like the SC1 tracks, I just can't pass up the live band recordings for SC2's Terran music. I didn't find Heart of the Swarm particularly interesting. They also interspersed the new boring campaign music with the good recordings from before, so the good music is annoyingly sporadic now.
Mass Effect series - All of it is great. There is a big difference between ME1 and the later games. The first game had very mysterious music to fit the theme of exploring the galaxy for the first time. ME2 & 3 go in a much more Hollywood style. The overall soundscape in ME2 & 3 is much better than ME1, but I still like more of the music in the first game than the rest.
Elder Scrolls series - Jeremy Soule, the John Williams of videogames. He's able to make epic tracks for the epic moments but also makes good quiet music when you're just out exploring. The only flaw is his battle themes; I've never liked them. He also did the KOTOR 1, Neverwinter Nights 1, and Guild Wars 1 & 2 soundtracks (among many others).
Red Alert 2 - The composer's last name is Klepaski or something like that. A soundtrack with a lot of rock / metal. Very unique compared to most games. Listen to Hell March.
Warcraft series - Tons of nostalgia for me here. I played these games for ages. Classic, medieval music. It's been so long I can't remember specific names of any songs, but I know I listened to the music a lot.
