I know this is going to open a can of worms, but between the two is there really that much of a leap in performance to warrant a price difference.

I'm assuming that you're referring to the RAM on graphics cards, since you can get certain ones equipped with either DDR3 or GDDR5. If so, yes... there is typically a pretty big difference between the DDR3 and GDDR5 versions of a GPU. The GDDR5 versions offer much more memory bandwidth for the GPU to work with, and are superior if using the same memory bus width.
Yeah DDR is normal system ram and GDDR is ram designed for graphics cards thats what the G stands for . You wouldnt compare the two.

You would if you were looking at 2 different video cards using the same GPU chipset, but one was advertised with DDR3 and the other with GDDR5. There have been several models like that.
The Nvidia GT630, for example-
