I believe the 2700k is a good choice, mainly because with the included heatsink you can crank it up to 5Ghz easily, making it much more futureproof. Also though I do agree Asus makes the best mobos, I like MSI and their P67A series. Can't go wrong with those crossfire/overclocking features.

As someone above said, the 2700K is 100 euros more (in his country) for a 100 MHz price increase. Since he has such a high budget, it would be better to get the 2500K and get something like water cooling or a Noctua DH-N14 and overclock to 4.5GHz+.
EDIT: Fair enough about the MSi mobo. But as you said, the Asus motherboards are the best, and if you can afford the best, get the best. (That's may seem hypocritical, seeing my response about the CPU, but there is a distinct difference between cost and worth.
