There used to be Triple Channel RAM with a Cas Latency of 6, but I can't find it anymore. :(

7 is still good :)

I think your motherboard should come with the cable.

If you can afford it, I'd recommend the HX version of that PSU 'cause it has the 80 Plus SILVER rating. :D

That's a very well planned build. There isn't really anything wrong with it and if you were to change parts it would either because you found a better deal or out of preference. The motherboard comes with SATA cables so you don't need to worry about the DVD drive not having cables.

What's the difference between the two?

The HX is modular. It really helps on your cable management.

What's the difference between the two?

The HX version is more efficient and will save you money in the long run (energy bills)
