Any processor with 40 lanes should be okay. You should list a lot more information when asking a question like this ie: what platform, budget, any uses besides gaming, ect.

Having 40 pci lanes isnt going to help when your only using one gpu with a pci-e slot at 16x. The extra lanes come into play when your using multiple pci-e slots for gpus or add on cards.

I wouldn't recommend 2, SLI/Crossfire be dying, only worth for 4k gaming.
6600k if you're on a budget, 6700k if you're not (they perform similarly in most games but 6700k has extra threads which helps for *a few* games).
6600 looks like an awesome deal. I'm upgrading from an amd mobo and cpu probably around christmas, and that's the one that is looking to be perfect in terms of price vs performance.
@saintsatan: Sorry :) It's for gaming. I'll just be using the one gpu as well. Also, as for budget somewhere round 500-600 dollars Canadian. Mobo isn't picked out yet. Likely an asrock. Nice deal for it on newegg.ca for about $100.;

Sorry it was late at night and I totally read that wrong. I thought it said a PAIR OF 1080's. Derp. Go for 6600 or 6700 like mentioned above.
