is there a way to get to the code of java programs?

i want to practis my java skills by modifing a large program, like adding bold and italics to notepad, anyone know how to unlock code out of programs?

you cannot "unlock code" out of a program that has been compiled. Unless the developers provide the source code you wont be able to modify the program. There's lots of so-called "open source" software that provides all the source code and encourages people to modify it to fix bugs and stuff. Linux is an example of an open source operating system and lots of the software developed for it is open source, so maybe you should look into installing Linux if you want to modify large programs.
