I am not a vegan, but I recognize the benefits to the environment that a Vegan diet provides where as our omnivore diet does not.

Don't know if you're joking or not, but I always thought it was silly how some people are serious when they say things like this.
Like, it's food. You like what you like. Who cares what people eat.
That said, while I am not a vegetarian myself, I do occasionally go meat-free at least one day a week. It's good on my wallet, the environment, and my health. I just make sure to take a vitamin B-12 pills on those days =)
I tried a vegetarian diet for two weeks and lolnoped the concept after the experience. Also the vast majority of animals that people consume for meat are farm animals, which are literally the products of millennia of genetic engineering that would be very poorly suited to living in the wild. These creatures literally exist solely because humans want to eat them and would die off in massive numbers if we started to go vegan.
I like my bacon.
As for rights, which rights?
The rights of the animals.

Animal suffering should be minimized as much as possible. There shall not be emancipation for that bacon, however.

Yet more likely than not you live in a modern society with paved roads, and buy goods from various outlets which second handedly affect animal life. Vegan from a moral standpoint is bullshit in this respect. We've raped the land they once occupied.

The right to life is in article 3 of the declaration of human rights. It basically means you aren't allowed to kill a person without a just reason.
So if animals should have the same rights as humans then we will need to decide if the delicious taste of bacon is a just reason to kill.
