If I were to unplugg my wii and take it on a trip with me would I lose any data? Would I have to reconnect to the internet when I get back and update it again?

No, the memory, channels, etc will stay, as well as the updates. But you'll have to update again if you missed any new updates.

Well when you take it back to your house

You'll have to reconnect to the internet
