I always pick Breton because they are the most human looking, and I model the character after myself. Plus Bretons seem pretty balanced.
I played as a Breton because they're human. And the Nords were kind of ugly :P I just can't relate to playing as some weird alien race. The specific abilities of each race didn't make any difference anyway as once you leveled up a few times that stuff was meaningless.
I admit to being speciest with my fantasy games:P. I pretty much never play anything that isn't human-like. Sometimes I'll play an elf, but not in TES as the elves are all very alien looking. So i play Breton, Redguard, Nord and Imperial exclusively. Also, any modded races that are human like (the Temptress, for example), i'll play. Overall, the Breton is kinda hard to resist because its racial perk is just extremely useful for every kind of build. I don't really care for the overly poutty cheeks on the females, though.

I went with Argonian and while the underwater breathing thing is nothing special the hitskin ability is quite useful. Generally any class can be made into whatever you want so its not that important what you start as.
For my first playthrough I always pick the corresponding race for the region, so in Morrowind it was a Dark Elf, in Oblivion a Imperial and in Skyrim a Nord.
Man, I had a pretty hard time to decide what I want to be in Arena though and ended up there with a Dark Elf Spellblade.

Generally the racial bonuses are pretty useless, which is why there's more than one mod out there that revamps them. However, the Breton's 25% magic resistance is extremely useful... and then there's the punchcat.
