Colossus 8 and 13 from Shadow of the Colossus: Very cinematic and epic
Pretty much every boss from RE4 was incredibly fun to fight.
The End from MGS3 was interesting and challenging, if a little boring at first.
The most epic boss fight, in my opinion, was at the end of Disc one on Final Fantasy VIII, when you fight Edea and Seifer. Truly an awesome battle that stands the test of time. The music is pretty epic too. I'm reading my Guinness Book of World Records: Gamer's Edition and it shows the record of the most powerful monster of the Final Fantasy series. This is taken directly from the book: "Yiazmat, who appears in Final Fantasy XII, has 50,000,000 HP and is found in the Ridorana Cataract. Yiazmat is the ultimate boss, and it can take several hours to kill it. It is neccessary to have the best armor, weapons, and accessories available, such as genji gloves or the Ultima Blade." Just a little fun fact. I've never played XII though. I've heard the battle system was horrible.
Lance Vance from GTA:Vice City.
I liked that guy a lot and then he backstabs you, I enjoyed sniping him in the face.
Megaman Juno- from Megaman Legends; it is one of the few games that pulled a final boss from nowhere right at the end of the game (2 small rooms away, to be exact), and manage to pull it off and make it awsome and memorable.
Sigma- From Megaman X4 and X5. X4 was just a cool series of battles, particuarly the third forum, while X5 was the series's climax, and originally it's end.
Luther- From Star Ocean: Till The End of Time. He was a neat final boss, he wasn't a bg edifice like many final bosses, and the conditions around the match are pretty cool, though spoiler filled.
Bowser- Yoshi's Island 2. Fighting a gigantic bowser was cool in this game, sadly, they ruined it in the DS remake.
Ansem- Kingdom Hearts. Well, counting all the fights with him at the end, one after another, it's cool and epic, though time consumeing. Just remember: If you believe you can fly, you so can, regardless of what gravity may make you tihnk.
Riku/Ansem-Kingdom hearts. A fun and neat battle, on my first playthrough I thought I had reached the end of the game already.
There are many more to mention....
I can't believe no one has said the Colossus of Rhodes from God of War 2. I may not be as long of a battle as alot of others but to me it was cool. All of the bosses from GoW 1 & 2 were cool. RE4 and RE5 had some cool bosses too.DManSteelerFanThis is Tegacy Platforms.

I felt most accomplished after I killed him and moved on to the last boss, which wasn't nearly as hard.

yeah it took me like 40 + tries to be able to do it for the first time but I got a lot of enjoyment out of finally beating it :D
I would like to just say Shadow of The Colossus, because the entire game is boss fights, but I won't.
The Boss in MGS3 was a great fight. Every aspect was excellent and after the cutscene you have to pull the trigger. It was just really cool.
