Mine : The longest journey!
iirc Dreamfall is part of The Longest Journey, and both Dreamfall and the current Dreamfall: Chapters are good, from what I've gathered. You play them?
As for me, I'd like to see a Tie Fighter remake; cutting edge graphics, open-"world" gameplay...I think it would be cool if they made you like captain of a Star Destroyer, but you're still a Tie pilot, so you can essentially take this mobile base (Star Destroyer) to various parts of the galaxy, fight missions in Tie spacecraft (and others, too), and oppress planets by bombarding or threatening them, and so forth. It'd add a lot of emergent gameplay, but you'd still have to have that classic story to keep you moving along.
Upgrading your star destroyer would be cool, you could research upgrades for various spacecrafts, requisition supplies to "purchase" new Tie Fighters and wingmen. I am really missing Lucasarts right now...
#1 for me is Panzer Dragoon Saga. I want so badly to be able to play it on other systems aside from just my Saturn, so not only can I stop being so paranoid about the condition of the disks, but also so that more people can finally play this masterpiece. Getting proper analog controls and a graphical facelift would be nice bonuses too.
Aside from Saga and the other Panzer Dragoon games, I'd also be down for remakes/remasters of the Dark Forces/Jedi Knight series, X-Wing/Tie Fighter series, Shenmue 1 & 2, and Skies of Arcadia.
@Macutchi: you buy Star Citizen yet? Can't wait!!!
If you want Wing Commander, I recommend Freelancer, then maybe Star Citizen (though the singleplayer campaign is a ways off).
Independence War 2 was also a lot of fun despite being criminally difficult for the first few hours.
Final Fantasy 7 but that's already going to happen along with resident evil 2 which is also being remade as well ~ Silent Hill 1 would be cool though
@mrbojangles25: my gaming pc hasn't been upgraded for 3 years. i've not really found a reason to spend any money on it since but i think star citizen will be the justification i've been waiting for! didn't really get into freelancer back in the day, sins and x3 (that was criminally difficult initially too) were the last space based games i enjoyed, besides the first mass effect. there was a thread not long ago on wing commander and it got me all nostalgic for it. but i do like the idea of a tie fighter remake. feels like a good time with the force awakens and the new films on the horizon
There's quite a few that I'd love to see but the one at the top of my list would probably be Chrono Cross. Seeing a full fledged remake of that game would blow my mind.
By remake, is that an old game that's completely redone to today's standards (like Halo CE Anniversary) or a new version of an old game (like Wolfenstein: The New Order for example)? I get confused :(
WWF No Mercy
Over 15 years later and still no wrestling game has been able to even come close to topping it. Just imagine how even more awesome it would be if remade to take advantage of modern hardware power and to be able to play it online!

Hmm, just one game
To many to be fair but one that comes to mind is No one lives forever, Crazy fun game.
But otherwise tycoon games and not made by indie´s but by a regular AAA studio so you will have a decent budget behind it .
Deus Ex. Now that game could really use some sort of remake/remaster because no matter how many mods you use, the game looks way too much outdated (even for me, who plays old games a lot).
Other games of that era (and even before that era) like Thief 1/2, Max Payne, Broken Sword etc have aged way better. System Shock 2 could use a remake too but it gets the job done with one or two mods.
Freedom Fighters! It has to be. The game is/was amazing. With a lick of paint, improved environments and controls, it would be something I'd actually buy. And I don't buy remasters.
Vanquish remake for PC. With Binary Domain style robot destruction, KB/M, a couple of more rocket slide stunts, upped graphics all around, couple of bonus chapters. It would be heaven!
Shogo: Mobile Armor Division. Not only is it one of the most imaginative and creative shooters ever made (mecha anime? Doom/Quake-style gunplay? Sign me up!), but it's also one of the most underrated gems in gaming history. Monolith Productions did a fantastic job of transplanting the charm of anime into the old-school FPS formula and the results show. It does show its age, which is all the more reason that there should be a remake of it. Heck, I sang its and FEAR's praises in an academic paper I had to pen to fulfill my B.S. degree! It's available on GOG if you're interested.
Also, it has one of the best themes I've heard in an FPS, and games in general:
