If you like RPGs than FFX or FFXII, also Valkyrie Profile 2. I enoyed playing the God of War, which is really a must own game for PS2. Other goodies include Gran Turismo 3 and 4 if you like racing, and I'm a big fan of Lego Star Wars, but the collection is better on PS3.

I agree FFX was definitely great. Though I enjoyed Resident Evil: Code Veronica as well. Silent Hill 2, Ico, Medal of Honor, MGS2 and .. ahem.. Zone of the Enders... :)
There are a ton of great PS2 games. Dark Cloud 2, Amplitude, Final Fantasy X, God of War, Jak, Ratchet.....it all depends on what you want to play really.
The only hard thing will be finding the old stuff. Gamestop/Ebgames will sell them used. Goozex is also great.

i'm going to agree with the sasage king of Chicago and add suikoden 3 to the list of great rpgs
Whatever you do, do not get the PS2 version of Need For Speed ProStreet. That is of course if you are into racing games. It is rudimentary compared to the PS3 version. To be blunt, it sucks. I owned the PS2 version (sold it on eBay), and my buddy owns it for the PS3. Trust me when I say you'd be wasting your money. If you're looking for a bargain thinking they're similar.. you'd be mistaken. Just thought I'd make a note of this.
My god there's so many great games on PS2, you have to be specific on genres you like just to narrow it down. Anyhow, here's some of my personal favorites that generally go overlooked: Suikoden 3, Beyond Good and Evil, and Shadow Hearts: Covenant.
FFX and FFXII are real good. If you don't already have RE4 get it. MGS 3 was awesome so I would suggest getting that and MGS 2. God of War is awesome and personally I really liked Ace COmbat 5. Great story and hell fighter jets kick ass
