The playstation was some sort of magical, the leap from sprites to polygons was an incredible jump and the system introduced whole new genres and gameplay that hadn't been seen before.
Tekken, Gran Turismo, Wipeout, Silent Hill, Final Fantasy, Grandia, Ridge Racer, Destruction Derby, Twisted Metal, Galerians, Legend of Dragoon, Parappa the Rapper, Pandemonium, Klonoa, Kula World, Tomb Raider.. Â they were all so fresh and new, it all started on the PSX. And it was the first time that a home console was marketed for a cooler older audience. In a way PSX felt like Mtv, it was hot, fast, sexy and cool. I mean, the prodigy, underworld, orbital and chemical brothers in Wipeout (including red bull commercials). It was awesome at the time.
PS2 however had Silent Hill 2...Â

I take your PS1 examples, and i raise them on the PS2. ;)
Tekken < Soul Calibur
Gran Turismo < Gran Turismo 4
Silent Hill < Silent Hill 2
Ridge Racer < Burnout 3/4
Destruction Derby < FlatOut 1/2
Twisted Metal < Twisted Metal Black
Tomb Raider < Tomb Raider Legend/Anniversary

Though i haven't played any of the others you mentioned. The point being that PS1 got there first, but each genre was honed and improved on for the PS2.
I agree that graphically the leap was not so big, but in the mechanics and the experience of the titles the progress was massive. Even if you take away the backwards compatability of the PS2, it still has a stronger library in comparison to similar titles.
