FFXII for me, I love the finally updated combat system and the characters don't leave you hoping they will all die at the end of the game(unlike FFs X,IX,VIII,... all but VII really.
FFIV is my favorite Final Fantasy. It did everything right, great difficulty curve, nice story, balanced party, and the gear and summons were equally awesome.
I go through a process with FF games. First time I play through the game without walkthrus or any other help. Then I go back and try for all the secret stuff. The second time through always makes me appreciate the game even more. So in that light, FFVII was my favorite the first time through, but I have to say that FFX is by far the richest and most interesting experience when you discover all the extras. (Note that I have not had a chance to do sidequests in FFXII, which is a terrific game.)
