How do you clean blood off your sword?

As Mackie said, you press the LB (left bumper) button while standing still and will fully clean off the sword. However, after 2 or 4 hits in a combo, you may press LB for a "quick clean" in which you throw some of the blood off of your sword. The quick one is just that, much quicker. If you are in a huge group of zombies and don't want to get hit while cleaning, use this to knock some off so you can keep fighting.
