Wow, I just realized I've been a member here for three and a half years. Too bad the whole thing's gone to hell in a handbasket.

Oh and I love the way the 'News' in my 'Feed' box is still from 2007. Really? Has there not been news since then?
What a complete farce TV.com has become.
In addition, someone told me the other day that TV.com doesn't have as up to date info as IMDB on television shows. How can that possibly be? Isn't this supposed to be the most comprehensive database on TV info? I guess it's not. Well ... I'm off to Television Without Pity which at least has several irreverent and hilarious recaps on shows. A bientot!

Just a reminder to you all, I post a blog daily over at Google's blogspot ... since TV.com is STILL NOT ADDRESSING OUR FECKING BLOG ISSUES!!!!! (How long has it been? well it's been at LEAST 2 months, I'm thinking more since the 'rollout from HELL'

I watched Hell's Kitchen on Hulu last night. I am a SUCKER for that show. I think it's brilliant, and ya'll know how much I ABHOR reality TV for the most part.

1. Accept that I am an imperfect and insecure person, and allow people to love me regardless and without question.
2. Work out for 20 minutes at least 5 days a week and establish a healthier lifes.tyle better foods, less of the bad stuff.
4. Accept my own limitations.
5. Smile and say hello to people every day, again, no matter what my mood is.
I think this is a very do-able list of items. Now ... If I can just remember them.
It's already the third of the month, and look at that ... I haven't worked out yet. (giggles) Like I said ... I'm an imperfect person.
Regular blogging resumes tomorrow. I know you all have been missing my succulent and delicious meals!!! (or maybe it's the poetry, or the word o the day ... or just my bright beaming personality)
my guy and I got into a bit of a fight.

Well, I had to delete my blogspot blog and then re-import it, so I've lost all of my followers. If you were following me you may have to re-follow me in order for everything to update correctly. I apologize for the inconvenience of that.
I'm really looking forward to having another 3 day weekend. I'll need it to get caught up on housework that was put by the way while getting ready for Christmas. In addition, I'll have more time to spend with my guy too.
I'm heading out to St Louis to meet up with my man the first week of February ... I'm really looking forward to that trip. I'm off again to Denver for some additional training the second week of January ... My posts may be a bit erratic while I'm out there. So that's the news in a nutshell.

Okay ... I know ... I'm going to have to do a New Year's blog eventually, but I figured I'd steal "Six Happy Things" from Profoundly Inarticulate so ... I'll be doing that tomorrow ... or the next day. Perhaps I'll even put some thought into some New Year's resolutions. (har-de-har-har)
TODAY however, I'm going to tell you about my 'Chatroom Stalker'.
So, here's the story. After I graduated from High School, I had a bit of a decision to make. Should I go to a school that specialized in Performing Arts (I was a competitive dancer) or go to 'Business School'? I chose the latter, as it seemed the safer and more stable choice. In addition, I chose my father's Alma Mater (University of No Opportunity). YAY .... Off I go to College!!!
After the first year (I was still living with my parents while attending college), my parents decided I really needed the 'full college experience' ... which apparently meant living in a dorm and not in their house. So ... I went to Huskerville USA a mere 45 minutes away from home.
Apparently I was an EXTREMELY adventurous sort while attending this fine establishment (which likely explains why it took me 6 years to graduate from college) as my brother was in a fraternity and all my girlfriends were dating college dudes in OTHER frats. YAY ... Party every night. (And I did just that ... every night ... then promptly slept through cla$$es the following days)
So apparently, a gentleman (we'll call him that for lack of a better term at the moment) made my accquaintance, and apparently also 'saw' my adventurous nature. (he he he)
Now, FIFTEEN years later (15 ... yes ... It's been 15 years since I've even been in the vacinity of this particular person) he stumbles across me in a Yahoo chat room. He briskly starts in on what an old, fat, drunken whore I am ...
WEE!!! So he's going on and on and on ... and finally someone in the room asks him ... why this is relevant ... FIFTEEN years later, and what his malfunction is about something that happened FIFTEEN years ago. (It's likely he's one of the FEW guys I sincerely just wouldn't give the time of day to)
So 'jerkface' sputters and spews about how it has affected my life. (Hmmm ... how would he know unless he's literally PHYSICALLY stalking me?) And he goes on and on about my 'unseemly' behavior ... again ... happening fifteen years ago. Everyone in the particular room I was chatting in immediately ignored him after that ... and he, of course, had to go make a new moniker to come right back in and start up again.
Jerkface did this several times (I submit he was looking for me online daily, but I don't chat daily) over a period of three weeks. Freaky freaky chat stalker. He lives in my town. I do hope he's got a wife and kids so he doesn't come a knockin' on my door (not that I ever open my door to a knock ... but still)
So that's my cyber-stalker story in all it's glory. Good times.

Okay, so I do have a few things today. First off, I'd like to tell you all about what I call 'My Big New York Salad'. Our local grocery store has a fabulous salad bar, which I frequently stop at (at least 3 times a week.) I know ... it would be cheaper to make my own gosh darn salad, but I usually stop on the fly. Anyway, for a little background, I lived in NYC for about two and a half years, and around the corner from the building I worked in was a deli, that had a salad bar (a bit of a rarity in the city). You'd pick your greens already in their to-go bowl and then you'd have the attendant at the bar add whatever toppings you would like. I always got spring greens and had them add, red onion, olives, tomatoes, sprouts, and cucumbers. I would flip between blue cheese dressing and ranch. (Both homemade by the deli ... freaking fabulous deli!!) So even though I now have to toss my own salad, at the grocery store salad bar, I usually stick to my big NY salad toppings. Today however, I was starving when I got to the store. So ... my salad today has, ham, turkey, cheese, cucumbers, sprouts, tomatoes, olives and sunflower seeds. I could probably feed a small community on this big ol salad. It's times like this I sort of wish I had a digi-cam. I don't ... so you don't get to see my terrific salad. I know you all are PEA GREEN with envy!!!
It's actually kind of odd that I want a cold salad ... as It's been 20 below here as of late, you'd think I'd prefer a hot bowl of soup ...
anyway ... onward HO!!!
I do have something fun for you though, I am from Omaha NE. Here are the absolute truthful driving instructions:
Forget the traffic rules you learned elsewhere. Omaha has its own version of traffic rules:
1. At a 4-way stop, the truck with the loudest exhaust goes first. The truck with the biggest tires goes after that. Blue-haired ladiesdriving anything have right of way anytime.
2. To find anything in Omaha, it is required that you know where 72nd & Dodge is. It is the Alpha and Omega, the Beginning and the End of all directions.
3. The morning rush hour is from 6:00 to 10:00. The evening rush hour is from 3:00 to 7:00. Friday's rush hour starts on Thursday morning.
4. If you actually stop at a yellow light, you will be rear-ended, cussed out and possibly shot.
5. Construction is a permanent fixture in Omaha. The barrels are moved around in the middle of the night to make the next day's driving a bit more exciting.
6. If someone actually has their turn signal on, wave them to the shoulder immediately to let them know it has been accidentally activated.
7. Never honk at anyone. Ever. . . Seriously.
8. The JFK Freeway, MLK Freeway, I-480 and US-75 are four names for the same road. (See also US-133, Blair High Road, Military Ave., NW Radial, and Saddle Creek Rd.)
9. The Omaha interstate and highway system is intended primarily for cargo-bearing trucks and resident commuters. Any cars not bearing Omaha/Council Bluffs plates will be cut-off, boxed-in and caused to miss their exit.
10. Watch very carefully for road hazards such as: potholes, barricades, dogs, cats, humans, cones, barrels, squirrels, rabbits, deer, pieces of other cars, raccoons, skunks, possum, truck tires, crows, or vultures feeding on any of these items.
11. If you are in the left lane and only going 70 mph in a 55-65 mph zone, you are considered a hazard and will be flipped off accordingly.
12. The minimum acceptable speed on the JFK/MLK/I-480/US-75 (see above) is 85mph. Anything less is considered downright sissy. This is Nebraska's version of NASCAR.
13. The seasons, spring, summer, autumn, and winter, are referred to here as Morning, Afternoon, Evening, and Night.
14. If it is below freezing and sleeting or snowing, then watch out! Omaha residents consider this "demolition derby day" and will be all over the roads (forward, backward, sideways, etc.) Please proceed with caution as you could be the next target.
15. Thou Shalt not turn left out of the middle lane of Dodge Street lest ye be struck down by the righteous vengeful hand of God. (Signs are posted saying "no left turn"!!)
16. Yes! The Middle Lane of Dodge Street does change directions twice during the day, in the morning you can go eastbound and in the afternoon you can go westbound in this lane. Pay attention to the little arrows. (It is not a center 'left-turn' lane)

Vegetable Lasagna
Ingredients:
1 (32 ounce) container whole-milk ricotta cheese
2 large eggs
Salt and fresh ground pepper
2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed to remove excess moisture
6 cups store-bought or homemade tomato sauce
12 no-boil lasagna noodles
1 pound fontina cheese, shredded
Directions:
Preheat oven to 400 degrees F. In a medium bowl, whisk together ricotta cheese, eggs, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add spinach, and stir well to combine.
Spread a small bit of tomato sauce in the bottom of a 9-by-13-inch glass baking dish or dishes. Arrange a layer of lasagna noodles on top. Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the remaining sauce; sprinkle with 1/3 of the grated cheese. Repeat to make two more layers, ending with cheese. If freezing, cover tightly with plastic wrap. Before baking, defrost in the refrigerator overnight.
Cover with aluminum foil. Bake 30 minutes. Remove foil; continue baking until top is golden brown, about 15 minutes more. Let cool slightly before serving.

Today is the Winter Solstice. This solstice marks the longest night of the year. I have a few things to post today. I wanted to start with information on the Druid celebration of the Winter Solstice. I follow a Celtic Druidic path. Following is a bit of information on Druidry.
Druidism, or Druidry as it is often called, is for some a spiritual path, for others a religion, and for others a cultural activity.
One of the most striking characteristics of Druidism is the degree to which it is free of dogma and any fixed set of beliefs or practices. In this way it manages to offer a spiritual path, and a way of being in the world that avoids many of the problems of intolerance and sectarianism that the established religions have encountered.There is no 'sacred text' or the equivalent of a bible in Druidism and there is no universally agreed set of beliefs amongst Druids. Despite this, there are a number of ideas and beliefs that most Druids hold in common, and that help to define the nature of Druidism today:
When preparing for the Yule holiday ... or 'Sabbat' I do the following:
I set up my Yule altar facing north. (This is the direction that aligns with the season of Winter.) The table is draped with an altar cloth. (I found a cute holiday table cloth that I use and consecrated)
I set a small bowl in the center of the altar and place a pillar candle in that. (Red, Gold, Yellow, or Orange to represent the sun.) The bowl is representative of rebirth, and the candle represents the 'Sun God' being reborn, I usually scribe some solar symbols on the candle I'm using. Finally, I rub a little cinnamon oil on the candle and leave it unlit until I begin my ritual observance.
I place evergreens on the altar, usually branches cut from a christmas tree, or a small potted evergreen. I then arrange my chalice, boline, and athame on the altar. Some other items I scatter about the table would be: A bowl of fruit, pine nuts, pine coans, acorns, holly, and clear quartz crystals.
Symbols of forest animal are also placed around the altar. I generally cut out pictures of woodland animals, stags and such to place around the candles. Finally, I have small cakes (I usually do cupcakes) and wine.
Once all that is in place I cast my circle, light the candles and begin:

When I stop the chant, I visualize the positive energy bursting forth, like the sun coming out from behind a thick cloud, and imagine strong rays of streaking out, empowering my wishes, and carrying my healing thoughts to their targets.

Bleu Cheese, Bacon and Chive Stuffed Pork Chops
Ingredients:
4 boneless pork loin chops, butterflied
8 ounces crumbled blue cheese
4 slices bacon - cooked and crumbled
4 tablespoons chopped fresh chives
garlic salt to taste
ground black pepper to taste
chopped fresh parsley for garnish
Directions:
Preheat the oven to 325 degrees F (165 degrees C). Grease a shallow baking dish.
In a small bowl, mix together the blue cheese, bacon and chives. Divide into halves, and pack each half into a loose ball. Place each one into a pocket of a butterflied pork chop, close, and secure with toothpicks. Season each chop with garlic salt and pepper. Keep in mind that the blue cheese will be salty. Place in the prepared baking dish.
Bake for 20 minutes in the preheated oven, or it may take longer if your chops are thicker. Cook until the stuffing is hot, and chops are to your desired degree of doneness. Garnish with fresh parsley and serve.

My Cla$$ went really well yesterday, although I was tired as 'all-get-out' upon returning home. I slept most of the night, got up for about an hour, ran out of smokie-treats, and went back to bed. Slept until noon. (I am such a lazy-bones)
My honey stayed at his dad's the last few nights. His dad's house, which doesn't have internet access, therefor he and I spoke not at all for two whole days. I know ... big whoops to you all who have husbands and loved ones over seas and such, this is pretty new for me though. Anyway, I spoke with him last night for a wee bit. Baked Eggs and Mushrooms in Ham Crisps(My fave breakfast recipe!!!)
Ingredients:
3/4 lb mushrooms, finely chopped
1/4 cup finely chopped shallot
2 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons crème fraîche or sour cream
1 tablespoon finely chopped fresh tarragon
12 slices Black Forest or Virginia ham (without holes; 10 oz)
12 large eggs
Garnish: fresh tarragon leaves
Directions:
Prepare mushrooms:
Cook mushrooms and shallot in butter with salt and pepper in a large heavy skillet over moderately high heat, stirring, until mushrooms are tender and liquid they give off is evaporated, about 10 minutes.
Remove from heat and stir in crème fraîche and tarragon.
Assemble and bake:
Fit 1 slice of ham into each of 12 lightly oiled muffin cups (ends will stick up and hang over edges of cups).
Divide mushrooms among cups and crack 1 egg into each. Bake in middle of oven until whites are cooked but yolks are still runny, about 15 minutes. Season eggs with salt and pepper and remove (with ham) from muffin cups carefully, using 2 spoons or small spatulas.
Cooks'note:· The eggs in this recipe are not fully cooked, which may be of concern if salmonella is a problem in your area.

Spaghetti Frittata
Ingredients:
8 ounces spaghetti, uncooked
1 tablespoon olive oil
1 medium onion, sliced
2 cups sliced fresh mushrooms
1 medium zucchini, sliced
1 (15 ounce) can diced tomatoes, undrained
8 eggs, lightly beaten
1 cup Mozzarella Cheese
Directions:
Preheat oven to 350 degrees F. Cook pasta as directed on package.
1. Meanwhile, heat oil in large ovenproof skillet on medium-high heat. Add onions and mushrooms; cook and stir 5 min. or until onions are crisp-tender. Add zucchini and tomatoes with their liquid. Cook 10 min. or until most of the liquid has evaporated, stirring occasionally.
2. Mix pasta, eggs and 1/2 cup of the cheese in large bowl; mix well. Add to vegetables in skillet; stir until well blended. Cook on medium-low heat 5 min. or until bottom of frittata is set. Sprinkle with remaining 1/2 cup cheese.
3. Bake 10 min. or until center is set. Cut into 8 wedges to serve.

Hail my friends,
So I don't have much news. Loki and I are getting back to our respective schedules. I work nights 3pm - 11pm and he's usually in bed by 10pm or so. He doesn't have cla$$es for a bit, so he's been staying up a bit later, but last week we spent a LOT of time video-conferencing and this week we've only spoken for a few minutes each night. We'll have more time to conference on Wed and Thur when I'm off work. We seem to be doing fairly well at that for the moment, we're making it work.
I don't know if I'd mentioned it before so I'll go into here and now. I am in a union ... I work for the railroad as a customer service clerk. (Internal service, IE. dealing with the yardmasters and trainmen and such) Anyway, the union is based on seniority, of which I have very little. So I got 'bumped' out of my current position, and I've been training my replacement these last few weeks. I'm not a fan of training, it wrenches my back leaning over and looking at everything to teach them what to do and how to do it. It'll be nice when this week is over and I can figure out what job I'll be doing next. I'll keep ya'll posted on that as well. I'll now be moving on to the more formal and formatted portion of my bloggity blog.

This recipe is for Phin:
Tofu Cutlets Marsala
Ingredients:
1/4 cup cornstarch
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 (16 ounce) package extra-firm tofu, drained, rinsed and cut crosswise into eight 1/2-inch-thick slices
4 tablespoons extra-virgin olive oil, divided
2 large shallots, minced
1 teaspoon dried thyme
6 cups sliced cremini or white mushrooms
1/2 cup dry Marsala wine (see Ingredient note)
2 teaspoons cornstarch
1 cup vegetable broth or reduced-sodium chicken broth
1 tablespoon tomato paste
Directions:
Preheat oven to 300 degrees F.
1. Whisk 1/4 cup cornstarch, flour, salt and pepper in a shallow dish. Pat tofu with paper towel to remove excess moisture.
2. Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat. Dredge 4 tofu slices in the flour mixture, add them to the pan and cook until crispy and golden, about 3 minutes per side. Place the tofu on a baking sheet and transfer to the oven to keep warm. Repeat with another tablespoon of oil and the remaining tofu, adjusting the heat if necessary to prevent scorching.
3. Add the remaining 1 tablespoon oil, shallots and thyme to the pan. Reduce heat to medium and cook, stirring constantly, until the shallots are slightly soft and beginning to brown, 1 to 2 minutes. Add mushrooms and cook, stirring often, until tender and lightly browned, 3 to 5 minutes. Stir in Marsala and simmer until slightly reduced, about 1 minute.
4. Whisk the remaining 2 teaspoons cornstarch with broth and tomato paste in a small bowl. Stir into the mushroom mixture, return to a simmer and cook, stirring constantly, until thick and glossy, about 4 minutes. To serve, spoon the hot sauce over the tofu.

Today is going to be a much bigger blog than I've done in a while (well ever at blogger).
I realize I rarely post much about myself and my personal life. It's not that I overly value my privacy, it's literally because my life is pretty banal. I've done a blog posting over at TV.com which outlined my routine in a sort of 'day in the life' feature. I'll link that if I can figure out how. I'll summarize it in brief here.
In general, I work 3pm - 11pm, five days a week. (I'm union ... so holding a particular schedule is dependent upon seniority, of which I have very little.) I usually wake up between 9:30 and Noon, depending on how late I was up the night before.
I usually get up ... take a shower, watch a little tv, make my lunch, put on my face, get dressed, and head to work. This continues day after day.
Some variations: I may stop at my mother's house to play with my niece and nephew. (She sits them when both of their parents are working) I might take time to do some grocery shopping. I've been known to turn off the tv and actually read a book. (Shocking? Probably not!) I might do some laundry, or clean the floors, or dust or vacuum. There are any number of variations which usually are pretty mundane.
There, my life in a nutshell, now on to an interesting story.
I'm pretty much a chat-aholic. I spend a lot of time in either a Pagan Chat room ... or a Books and Literature Chat room. (Not as much now that I've found the joys of blogging and blopping) Moving on ... One night I was ranting on some soapbox or another to a fellow chatter. At which time, a third person got into the mix. We'll call him Loki (as that's his chat name). Anyway ... he and I argued and in general annoyed eachother.
Regardless of the annoyance and the argument, I found him to be intriguing, therefor, I posted a request to add him to my friends list. He did, and requested the same from me.
Oddly, we began corresponding, frequently. We discovered we had more in common than not. (We just stay away from Political topics and in general we're pretty darn amiable)
This was about three weeks ago. There isn't a day that goes by that we don't talk on the phone, or barring the ability to do that, video conference online. (He lives about 6 hours from me)
We've grown extremely fond of eachother in such a short amount of time, and we're making plans to meet soon after the holidays. (I can't wait!!!)
So I'm completely infatuated with him, and he with me. So wish us luck on this journey we're taking together. Have any of you all had to struggle with a long distance relationship?

Eggplant Parmesan Rigatoni
Ingredients:
Vegetable oil, for frying
1 eggplant, thinly sliced crosswise
Flour, for dredging
Salt
1 pound rigatoni
2 teaspoons extra-virgin olive oil
2 cloves garlic, halved
1 (28 ounce) can tomatoes
1 (8 ounce) package shredded mozzarella
8 fresh basil leaves, thinly sliced
Freshly grated Parmesan cheese, for serving
Directions:
In a large skillet, heat 1/4 cup vegetable oil over medium-high heat until hot but not smoking. Dredge the eggplant slices in the flour, shaking off any excess. Add enough eggplant slices to the skillet to fill it without crowding and fry until golden brown, about 2 minutes on each side. Transfer to a paper-towel-lined plate and sprinkle with salt. Repeat with the remaining eggplant slices and more oil. Let cool, then cut into 1/2-inch strips. Set aside.In a large pot of boiling salted water, cook the pasta until al dente; drain and return to the pot.
Meanwhile, heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring, until golden, about 2 minutes. Stir in the tomatoes and bring to a boil, then cover and simmer until thickened, about 10 minutes
Add the tomato sauce to the cooked pasta and toss to coat, then stir in the mozzarella. Divide the pasta among shallow bowls and top with the reserved eggplant strips, basil and Parmesan.
Yield: 4 servings

Chicken Paprikash
Ingredients:
4 each chicken drumsticks and thighs (about 2 1/2 lb), skin removed
1 can (10 3/4 oz) 25% less-sodium cream of mushroom soup
2 Tbsp paprika
1/2 cup nonfat sour cream
Directions:
1. Place chicken in 3 1/2-qt or larger slow-cooker. Stir soup and paprika in small bowl until blended. Spoon soup mixture over chicken to cover.
