How do I acces the full roster offline in vs mode ?

Hi. Just picked upthe game today to play some offilne local one on one with my wife and kid, but it seems there arevery few fighters to choose from in this mode..am I missing something here ? We will mainly play this in the stadard one on one mode at home, so I would love to have more choice with characters. can someone please xplain how i get access to the full game roster, or must I compete in other modes such as classic fights tohave access to them? And where is Kimbo ? I cant find him anywhere. ! Thanks guys
