What do the G's next to the animals mean?

The "G" stands for "Generation".
Completing challenges will increase your stats for that generation.
The better mate that you find, the better the stats the next generation will receive.
Also note that inherited stats are permanent. You will begin to notice on the "Character Select" screen the graph will get larger in some areas.
