You can try it on NG+
If you really want to try it this time around you can try Healel and turn on Gathering for the slight heal. Guard and only attack when you know you can get a hit in and not get punished. Slash with the rubble if you have a rogue edge. It's possible to lure one cougar into the water so you only have to take on two at a time, but I never did that. Vertical Slice is going to be, for the most part, useless as it deals minimal damage versus risk. Just tank hits and hit with the healel when possible. Also wear the Hunter set for the HP boost.

Haven't gotten there yet, I'm on Chapter 21 and on level 27 so I haven't really attempted it. They seem tough though.
I saw one guy on youtube lure the Cougars in the water then he jumped up on land and kept his distance. He pulled out his bow and just shot them with arrows until they died. It took him like 30 minutes to kill all three of them with such pitiful damage but he managed to do it safely... so maybe try doing that? Couldn't hurt.
I plan on using this strategy if they become a nuisance.

I believe I did it in my mid 30's my first play through. Took me probably 30 minutes, since I did so much weapon switching. I rotated between Healel, Lapis Lazuli, and Fallen Angel. Used manual controls.
Basic strategy was to turn on Gathering and equip Healel. Circle them while guarding and get in a couple attacks when I was sure I wouldn't take a hit. I made sure I had full health using Healel this way, before attempting the next part. Also, from guarding attacks Burst builds to max. When I had full health and max burst, swap to Lapis Lazuli, use burst, then swap to Fallen Angel and run up a far away wall. While the now slowed cougars approach, aim the Vertical slash slightly behind them, in hopes that you can land it and not take a hit. If you do take a hit, well that's why I would make sure I had full health before beginning the burst->Vertical slash combo. After a single Vertical slash it was back to Healel and guarding/circling to repeat the entire process.
It was insanely time consuming and I doubt it's the most efficient way to tackle them, but I did manage it. In retrospect, I wonder if just abusing the Arrow tactic would have been better, or even just trying to guard/tank/attack opportunistically, rather than the weapon switching.

I tried this several times but couldn't get it to stick, the cougars swim faster then you so it's hard to get to land before they do so the timing on it must be tricky?
Anyways, if you're level 41, you're probably already near the point of no return which is when you go to swear loyalty to the Count? Any chance of getting some more leveling in between that before trying again?
Is the problem the Cougars ganging up on you while you wait for Gathering Burst? If that's the issue, are you wearing Heavy Armor to reduce the damage while Guarding?
Is it that Helel doesn't heal enough? Hmm... maybe switch to Hunter/Cloth Greaves too when you switch to Helel? It's only a 20% health bonus but it might keep you healthy long enough longer. Definitely don't try attacking without Gathering Burst (though if you're using Eclipse, you're probably doing that already).
Also, even though it's just you, turn on Gathering anyway, you get minor life leech while attacking when Gathering is on.

Get +6 heavy armor and greaves and Nameless Nothingness. Run back and forth between the two far walls Vertical Slashing like a madman. It should take you about 15 minutes.

This sidequest has single-handedly ruined my playthrough because I need that Silver Thread.
Thanks for the advice, everyone.
