Im just wonderin if its a good idea to level up as many skills as possible or what? since you can raise every single catagory right?

You can, but I find that incredibly boring.

I RP as certain classes and builds. Whatever my RP doesn't use skill wise, I ignore. Same goes for certain quests and equipment.

Yes, you can but there are not enough perk points to unlock every perk. Level up the skills you won't use normally and use the earned perk points on the skills you will use.

I'm usually all over the board depending on what I want to focus on.

    I've done:

Werewolf [Alteration, Restoration, Sneak, Illusion, Alchemy]
Thu-um Only [Destruction, Conjuration, Illusion, Alchemy, Light Armor]
Pure Mage [Alteration, Destruction, Conjuration, Illusion, Restoration]
    Assassin [Alchemy, Sneak, One-Handed, Illusion]
Khajiit Unarmed [Smithing, Block, Heavy Armor, Enchanting]

I try to limit the number of crafting skills to focus on and I rarely use Enchanting or Smithing as I find them tedious. I only put points in Speech so I can sell any item to any merchant and I never put points in Lockpicking.

So, if you put an Oriental guy in a bowl, and spin it around, does he become disOriented?

The skills you use will level naturally. Over leveling non-combat/ non-essential skills early will make the enemies more powerful than you. Don't punish yourself. If you have Dawnguard for example, the random vampire town attacks will eventually wipe out the populations in towns as they scale to your level.
