At least to me - is because they stand there like idiots as you walk away, and then all of the sudden you hear them running very fast up to you, at which point they stop, and repeat the process over and over. They seldom just slowly jog and keep pace with you. And some of the dogs seem to get in your way even more often than regular followers, pushing up against the back of me and what not.
Now granted, this is only based on experience with Barbas and the dog you can buy from Markarth, I haven't tried the dog you can find near Solitude, but I wouldn't think it'd be any different.

That's how all followers in the game are, at least in my experience. You'll hear them jogging behind you, then, eventually you realize you don't hear them anymore, turn around, and they're like 100 feet behind you just standing there staring. Then, after a few seconds, they quickly sprint to catch up to you. This repeats until you actually reach whatever location you're looking for.

Dogs have pathing so they can sniff your butt. Human ones give you more space (though the initiates have the dogs pathing for some reason).

Please don't neglect to mention how they sometimes sprint right THROUGH you, messing up your shots, cancelling your current actions, or even occasionally killing you.

None of you seem to understand. I'm not locked up in here with you. You're locked up in here with me!

And yes, this s*** right here. So annoying. When the dogs do finally stop chasing butterflys or whatever the hell they do, and finally do catch up they are so close to you that they actually push your character

Yeah, I've never been a big follower fan, but in new vegas, I gave Boone a shot.... he and I got a lot of good headshots together.

Ya know... Dog Meat from Fallout 3 never had these problems... well other than never shutting the hell up, but if you weren't a stealth character, this would actually help you because it'd often alert you to enemies before you normally would be alerted to them.

Barbas is cool, though, since he was invincible. But yeah, I'd take Marcurio and two conjured Dremora Lords over a dog follower any day.

UESP says their target box is much larger than their displayed image; which is why it's hard not to kill them with bow shots and spells.
Even buying a horse is a better bargain
