Turn off Super Sonic at will?

No, the only way for the Super Sonic effect to wear off is to let your Rings get consumed to 0.

Yes, if you use the switch monitor that switches places, it will swap your superstate to player 2/cpu and you will still be yellow untill you get hurt once.
