The X-Wing series.  With contemporary gfx technology we could get the look of classic Star Wars *spot on*

at least we have the Xwing-Alliance Upgrade Project to play with. 

Also:

Wing Commander 4's cinematics were shot on film - so it would be awesome to get a re-release with the movies in hi-res dvd glory (course all the cgi effects would probably have to be redone) but anyway -

hi res movies with an up to date flight engine.  That would do it.
