I'll name three of them and go over them one by one: Shogo: Mobile Armor Division, Blood, and TimeSplitters.
Shogo: a mecha anime FPS developed by Monolith Productions that takes its presentational influences from shows like Patlabor and Macross and blends them with the gunplay of Doom and Quake. An amazingly fun and indelible romp that oozes Japanophilic charm and old-school character.
Blood: a macabre-themed FPS developed by Monolith Productions that borrows its self-referential and bloody formula from Duke Nukem 3D and coalesces it with horror works such as The Phantom of the Opera and Friday the 13th. A highly imaginative shooter filled to the brim with pitch dark humor.
TimeSplitters: an FPS with a time travel premise developed by Free Radical Design that uses the Goldeneye-style formula to great effect with its wide assortment of zany characters and weapons that span multiple centuries, which are complemented with exceptional humor and level design.
Shogo: Mobile Armor Division. Not only is it one of the most imaginative and creative shooters ever made (mecha anime? Doom/Quake-style gunplay? Sign me up!), but it's also one of the most underrated gems in gaming history. Monolith Productions did a fantastic job of transplanting the charm of anime into the old-school FPS formula and the results show. It does show its age, which is all the more reason that there should be a remake of it. Heck, I sang its and FEAR's praises in an academic paper I had to pen to fulfill my B.S. degree! It's available on GOG if you're interested.
Also, it has one of the best themes I've heard in an FPS, and games in general:
That's a tough one! Honestly, I'll have to go with the TimeSplitters series. The mix of techno, orchestral, and ambient tracks really add to the games' outstanding presentation.
