I feel that the first one is the best place to start. It has a great storybook feel to it and is loads of fun. Despite some really clever level design and chase sequences, the second feels fairly flawed and has some game-breaking glitches. The third is a good return to form but still doesn't match the first even with the additions of instant kills (nerve shreddingly brilliant) and some clever boss fights.
I would have to say FFVII. I even had dreams about it. Why did I not realise that you could just land in the volcano using the airship. It took me absolutely ages to breed that stupid golden chocobo to get there and I didn't even need it!
Stubbs is a great laugh and eating brains never gets old. I think the shortness of it went in it's favour as it was a blast from start to finish and genuinely funny (if the idea of tearing off someone's arm and beating them over the head with it is funny...and it is!)
