I know for adding using mods you got to delete that folder but what are the files in it used for, what do they do?

Don't quote me on this but i think its some sort of error reporter/safeguard..

If you try to use a mod with META-INF intact it gives a error report about illegal files..

At least mine did when i forgot to delete it when i was first adding mods, but I'm a newb at MC so this is just guesswork.

I'm no expert on this either, but based on the name I'm going to guess the META-INF folder handles information that communicates between files somehow. Maybe used for error reports, maybe something else. The reason you have to delete it is because the data in it is from the original files, and wouldn't match up with modded ones.
