If you run the Mass Effect 3 Configuration Utility (located at Origin Games\Mass Effect 3\Binaries\MassEffect3Config.exe) you can change more. Windowed, Windowed Mode, Aspect Ratio, Resolution AA, Motion Blue, Dynamic Shadows, Number of cinematic Lights, Use Spherical Harmonic Lighting, and Anisotropic Filtering.

From what i've played, there are no settings to change. only resolution, brightness, fullscreen toggle, antialiasing, and dynamic shadows. all are on/off switches with the exception of resolution and brightness.
