How do you know if you're playing with somebody who never played Journey before?

Observe them as they wander around. I take the following as signs that they're likely NOT a new player, but there's no surefire way to tell if they're definitely new, as was said already:
1) Patterns on the hem of their robe
2) White robes
3) Moving directly towards sigils (powerups), glyphs (murals), or key checkpoints
4) Starting to charge their burst up about a second before they arrive at the place they'll use it
5) Bursting again get a second, mid-air boost from the flocks of ribbons in order to get even higher
6) Shorter chirps and only for specific reasons
In my experience, the players I assume are new tend to wander around a bit more, have a tiny bit more trouble with game mechanics (particularly flying on early levels), hug you a bit more, and are more chatty with their chirps.

The best method is by observing their robe pattern. If just the bottom rim is gold, its likely a new player. This is not 100% foolproof as its proven for an experienced gamer to just delete their save file and start a new game so that their robe no longer has the extra patterns on their robe. I've done this myself however I try to act as if I was a newbie as I won't show my partner everything nor get everything. It worked well as I've gotten PSN messages end game a few times from people who thank me for being a good companion. Hopefully other players do what I do since in the end, there's no real way to tell.

Each time you go through the game the hem of your robe gets another pattern. This increases up the robe. I do not know how far because this is only my fourth run through.
I agree with CompilerCoyote on most points. At this stage I am wandering through the levels to find objects I missed and also gather trophies - but I will stop and help those I see. The lack of actual communication can make that hard.
I find that newer players rush though and the game encourages you to do this.
