PvP all the time
Get 100% map completion
Play ALL the classes!
or, if you want to get fancy, go back to the very beginning and attempt to accumulate every item in the entire game that aren't from quests.

what I've done on my 80s, outside of PvP:
explore different maps
try different builds
get better gear

Get decked out in exotic gear
Transmute said exotic gear to get a look you want with the stats you want
Use dyes to get a look you want
Start farming for legendary weapons
Do jumping puzzles
Start a new character
The list goes on...
There's always something to do in this game. Reaching level 80 basically just means you can do anything and equip the best gear. Typically first thing I do is get exotic gear for my build and a specific look. Once I don't have to worry about stats I can really have fun.

for instance, i'm trying to work towards getting jormag's breath http://wiki.guildwars2.com/images/1/18/Jormags_breath_animated.gif as well as other cool looking weapon skins. it's relatively easy to acquire the highest stats in the game, the really rare weapon skins have the exact same stat allocation as the highest tier of weapons (exotics). i think this is better than having a stat treadmill, i was really fond of my tier 2 gear in WoW, but once it became irrelevant, i had to throw it away.

if you were expecting to go on raids for increasingly awesome loot, this isn't WoW
if you were expecting to solo bosses and dungeons that you needed 6 men to run before, this isn't most MMOs(like cabal, maplestory, etc.)
