Metal Gear Solid 4 is the best I've played in the genre, though the cinematics were a little much... okay, a lot much. But the gameplay and graphics are second to none.
Other than that, I would say Assassin's Creed is a good one, though completely different from Splinter Cell and MGS. Replay value is a little low, however.
By modern do you mean recently made, or set in a modern setting?
Tenchu Z is a stealthy ninja game set in feudal Japan.
The Hitman series is very good, though I think only Blood Money has come out on 360.
Assassin's Creed is also a very good game, set in 1191AD at the time of the Crusades around Jerusalem. The combat is fairly easy, but if you enjoy free-roaming games and finding your own way around to perform an assassination then this would be a good choice for you.
