Looking at Ace Combat 6 but is there anything better? Looking for something realistic - not something like Battlefield, a flying-only game.

Theres also that Apache Air Assault game, if helicopters are your thing... I dunno how realistic it is, but getting a handle on how to fly in that game is an achievement in itself.

From what I understand, Over G Fighters, I'd steer clear of Ace Combat if you want something realistic.

battlefield 3. they've pretty much patched anything that can take choppers/jets down.

If you want a flight 'sim', you have to go to PC. Xbox won't have enough controls available to play a sim style game. There's a joystick out there for the 360, but it's not made for an immersive game (once again, few buttons). IL2 Birds of Prey is an arcade game, IL2 Sturmovik 1946 for the PC is a true combat flight simulation game (Sturmovik gamd and engine with all the expansions for $10). Get a good joystick (Saitek x-52 reccommended) and get up there for the closest thing to Flight Simulator with weapons you'll find around. There's a new game out from the team (IL2 Cliffs of Dover), but it's a resource hog and buggy right now. The team should have it working perfectly in a year or so, but like I said, it needs a ballin' computer to work.

Its a pretty good flight sim if you like it when your sims that have NPCs that steal the planes.
