Haven't epic games said that the ps3 version works really well and that the unreal engine is good on ps3?

I'm sure they have had PS3 footage before of it in action and PC, the more likely reason why they showed x box footage is because it was recently announced to be going to 360 and no footage of it on 360 has been shown before

My guess for not having PS3 footage would be the increased time it takes to develop for the PS3. Not that I know this first hand or anything but I thought it was common knowledge that PS3 development is more time consuming.

Just because they showed the 360 version doesn't mean that the PS3 or PC versions are worse. There could be a variety of reasons as to why they chose to show the 360 version. Possibly because they just announced it.blurb1324
